SMOKY APPLE AND CHEDDAR SALAD


2 slices Canadian bacon, cut into 1" pieces
4 oz. chunk reduced-fat cheddar cheese
1/4 c. canola/olive oil mix
2 tbsp. white vinegar
2 tbsp. chopped fresh dill
2 tbsp. finely chopped red onion
1 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
8 c. green leaf/spinach mix
1 large gala apple, cored, cut into 1/2" wedges
In large skillet over medium-high heat, cook bacon, drain. Using Christmas cookie cutters, like small wreaths, cut cheese into shapes. In large bowl, whisk oil, vinegar, dill, onion, sugar, salt and pepper. Add lettuce mix, apple and bacon, toss lightly to coat. Add cheddar.
